Grain size
Which sharpening stone you need completely depends on the state of your knife. Are your knives blunt or even damaged? If so you need a coarse sharpening stone with a low grain size. A coarse sharpening stone quickly removes a lot of material. As such you can quickly sharpen the edge of your knife and remove all damages. A coarse sharpening stone, however, won't leave you with sharp results! For a razor-sharp knife you need fine sharpening stones with a high grain size. The higher the grain size, the finer and sharper the results.
